Six TREHA trehalose cocktail recipes including Daiquiri, Paloma, Whiskey Sour and fruit cocktails

TREHA® gives you a different way to build a cocktail.

Because trehalose is only about 40% as sweet as sucrose, you can retain the body and balance that dissolved sugar brings to a drink while allowing more of the ingredients you actually want to taste — fruit, citrus, botanicals and spirits — to come through.

The six recipes below have been designed specifically around those properties. They are not simply familiar cocktails with a different sugar added: each one gives TREHA® a useful job to do, whether that is bringing grapefruit forward, letting a good rum speak more clearly or keeping rich berry flavours from becoming overly sweet.

Start with a TREHA® Cocktail Syrup

All six recipes use the same simple syrup, so make this first.

Ingredients

Method

  1. Warm the water gently.
  2. Add the caster sugar and TREHA®.
  3. Stir until completely dissolved.
  4. Allow to cool.
  5. Keep chilled until required.

This syrup contains the same total amount of sugar solids as a conventional syrup made with 100g sucrose and 100ml water, but its theoretical sweetness is only around 70% as high.

That gives you a useful combination behind the bar:

  • less sweetness
  • good cocktail body
  • more room for fruit and citrus
  • greater prominence for the spirit

1. TREHA® Daiquiri

Cleaner, brighter and more rum-forward

The Daiquiri may be the best cocktail for discovering what TREHA® can do.

With only rum, lime and sugar, there is nowhere for excessive sweetness to hide. A TREHA® syrup lets you retain enough sugar solids to balance the lime while giving the rum and fresh citrus considerably more room to show.

Ingredients

  • 50ml white or lightly aged rum
  • 25ml fresh lime juice
  • 15ml TREHA® Cocktail Syrup
  • Ice

Method

  1. Add the rum, lime juice and TREHA® Cocktail Syrup to a shaker filled with ice.
  2. Shake hard for 10–12 seconds.
  3. Double-strain into a chilled coupe or Nick & Nora glass.
  4. Garnish with a lime wheel or expressed lime peel.

Why TREHA® works

A conventional Daiquiri can move very quickly from perfectly balanced to noticeably sweet.

TREHA® allows you to keep the syrup contribution while reducing its sweetness, helping the cocktail taste:

  • cleaner
  • sharper
  • more aromatic
  • more obviously of rum and lime

Try it side by side

Make one Daiquiri with conventional 1:1 simple syrup and a second with TREHA® syrup. Use exactly the same quantity of syrup in each.

2. TREHA® Grapefruit Paloma

Bright grapefruit without the sugary finish

Grapefruit is particularly interesting with trehalose because it combines acidity, bitterness, astringency and powerful citrus aroma.

TREHA® gives you a way to balance all of those characteristics without simply covering them with more sweetness.

Ingredients

  • 50ml blanco tequila
  • 50ml fresh pink grapefruit juice
  • 15ml fresh lime juice
  • 15ml TREHA® Cocktail Syrup
  • 50–75ml chilled soda water
  • Small pinch of salt
  • Ice
  • Grapefruit wedge to garnish

Method

  1. Fill a highball glass with ice.
  2. Add the tequila, grapefruit juice, lime juice, TREHA® syrup and salt.
  3. Stir.
  4. Top with chilled soda water.
  5. Stir gently once more.
  6. Garnish with grapefruit.

Why TREHA® works

The reduced sweetness allows the grapefruit to remain distinctly grapefruit, rather than becoming generic sweet citrus.

You still get its characteristic acidity and bitterness, but with enough sugar structure to bring the cocktail together. The tequila also remains far more obvious in the finished drink.

Make it drier

For a sharper version, reduce the TREHA® syrup to 10ml.

For a rounder, more fruit-led drink, stay at 15ml.

3. TREHA® Whiskey Sour

Keep the body. Let the whiskey speak.

A Whiskey Sour needs enough sweetness to balance fresh lemon, but too much sugar can easily bury the whiskey underneath it.

TREHA® gives you a useful middle ground.

Ingredients

  • 50ml bourbon
  • 25ml fresh lemon juice
  • 17.5ml TREHA® Cocktail Syrup
  • 15ml egg white or aquafaba, optional
  • 2 dashes aromatic bitters
  • Ice

Method

  1. Add all ingredients except the ice to a shaker.
  2. If using egg white or aquafaba, dry-shake first.
  3. Add ice and shake again.
  4. Double-strain into a rocks glass over fresh ice, or serve straight up.
  5. Garnish with lemon peel.

Why TREHA® works

The syrup still brings enough body and sweetness to balance the lemon, but the lower overall sweetness gives more space to the bourbon's:

  • oak
  • vanilla
  • spice
  • fruit
  • barrel character

The result should taste like a Whiskey Sour rather than a sweet-and-sour drink containing whiskey.

4. TREHA® Passion Fruit Martini

More passion fruit. Less syrup.

Passion fruit cocktails are intensely aromatic, but they are often built from several ingredients that are already sweet.

The result can be delicious but much sweeter than the fruit itself needs.

TREHA® shifts the balance back towards passion fruit, lime and spirit.

Ingredients

  • 40ml vodka
  • 20ml passion-fruit liqueur
  • 30ml passion-fruit purée
  • 15ml fresh lime juice
  • 10ml TREHA® Cocktail Syrup
  • Ice
  • Half a passion fruit to garnish

Optional: 25–50ml dry sparkling wine served alongside.

Method

  1. Add the vodka, passion-fruit liqueur, purée, lime and TREHA® syrup to a shaker.
  2. Fill with ice.
  3. Shake hard.
  4. Double-strain into a chilled coupe.
  5. Garnish with half a passion fruit.
  6. Serve the sparkling wine alongside if desired.

Why TREHA® works

Passion fruit already provides:

  • intense aroma
  • acidity
  • natural sweetness
  • a slightly drying character

It does not need a heavy layer of additional sweetness to make it taste more fruity.

TREHA® allows you to balance the lime while keeping the cocktail bright, aromatic and unmistakably passion fruit-led.

5. TREHA® Blackberry Bramble

Fresh berry character without becoming jammy

Blackberry, crème de mûre and ordinary syrup can quickly push a Bramble towards jam rather than fresh fruit.

Using TREHA® helps retain the body needed to support the gin and lemon while reducing the sweet finish.

Ingredients

  • 45ml London dry gin
  • 25ml fresh lemon juice
  • 15ml TREHA® Cocktail Syrup
  • 15ml blackberry liqueur
  • 3–4 fresh blackberries
  • Crushed ice
  • Fresh blackberry and lemon to garnish

Method

  1. Lightly muddle two blackberries in a shaker.
  2. Add the gin, lemon juice and TREHA® Cocktail Syrup.
  3. Add ice and shake briefly.
  4. Strain into a rocks glass filled with crushed ice.
  5. Slowly drizzle the blackberry liqueur over the top.
  6. Garnish with fresh blackberry and lemon.

Why TREHA® works

TREHA® gives you enough sugar solids to support the fruit without adding as much sweetness as sucrose.

That helps keep three flavours distinct:

blackberry + gin botanicals + lemon.

This technique is particularly useful when your berries are very ripe or your blackberry liqueur is already quite sweet.

6. TREHA® Citrus Highball

Light, aromatic and deliberately simple

The Citrus Highball is the simplest recipe in the collection, which makes it another excellent demonstration of TREHA®.

With only spirit, citrus, syrup and soda, even small changes to the sugar system are immediately noticeable.

Ingredients

  • 45ml vodka, London dry gin or blanco tequila
  • 20ml fresh lemon or lime juice
  • 10ml TREHA® Cocktail Syrup
  • 80–100ml chilled soda water
  • Ice
  • Grapefruit, lemon or lime peel

Method

  1. Fill a highball glass with good-quality ice.
  2. Add the spirit, citrus juice and TREHA® Cocktail Syrup.
  3. Stir briefly.
  4. Top with chilled soda.
  5. Express the citrus peel over the drink.
  6. Garnish and serve immediately.

Why TREHA® works

A highball should be refreshing.

Too much conventional syrup can quickly make it feel heavy.

TREHA® allows you to soften the fresh citrus and give the drink a little more body while retaining a clean, dry and aromatic finish.

Try three versions

Gin + lemon
Fresh, botanical and aromatic.

Tequila + grapefruit or lime
Bright, mineral and citrus-led.

Vodka + lime
Extremely clean and a good test of TREHA®'s effect on balance.

Use the Same Idea in Your Own Cocktails

Once you have tried the six recipes above, you can apply the same principles to drinks you already make.

Start with 25% TREHA®

If your syrup normally contains 100g sucrose, try:

75g sucrose + 25g TREHA®.

This gives you a noticeable but relatively gentle change.

Move to 50:50

For drinks where fruit, acidity or a premium spirit should dominate, try:

50g sucrose + 50g TREHA®.

This is the syrup used in the six recipes above.

Use TREHA® where several ingredients are already sweet

Trehalose becomes particularly useful when a cocktail already contains ingredients such as:

  • fruit liqueur
  • cordial
  • sweet vermouth
  • fruit purée
  • syrup

Rather than simply reducing everything, change the composition of the syrup first.

That gives you far more control over the relationship between sweetness, body and flavour.

What Should You Taste For?

Do not assess a TREHA® cocktail only by asking:

“Is it less sweet?”

Look at the whole drink.

Compare:

  • fruit intensity
  • citrus definition
  • spirit character
  • aroma
  • acidity
  • bitterness
  • body
  • smoothness
  • finish

The goal is not simply to make the cocktail drier.

It is to make the ingredients you deliberately chose taste more clearly of themselves.

The TREHA® Cocktail Starting Rule

For most cocktail recipes, a useful first experiment is:

Replace 25–50% of the sucrose in your syrup with TREHA®.

Start at 25% when you want a subtle change.

Move towards 50% when:

  • your cocktail feels cloying
  • fruit is disappearing beneath sugar
  • the spirit deserves more prominence
  • you want to retain syrup body while reducing sweetness
