How to Use Trehalose in Baking

TREHA® trehalose is increasingly used by professional bakers and pastry chefs because it offers something ordinary sugar cannot easily provide: the ability to separate sweetness from some of the other functional effects of sugar.

TREHA® has approximately 38% of the perceived sweetness of sucrose, but its value in baking extends beyond taste. Depending on the recipe, trehalose can help with moisture retention, softness, crispness, foam stability, frozen storage and resistance to staling.

The important point is that there is no single trehalose substitution ratio that works for every bake.

A sponge cake, biscuit, meringue and loaf of bread use sugar in different ways. TREHA® therefore needs to be used differently in each.

Can I replace ordinary sugar with Trehalose?

Yes, but complete replacement is rarely the best place to start.

Ordinary table sugar, or sucrose, affects much more than sweetness. It contributes to:

  • structure
  • browning
  • aeration
  • moisture
  • texture
  • spread
  • crispness
  • freezing behaviour

Replacing all of it with trehalose can therefore change a recipe substantially.

For an ordinary cake or biscuit, a useful first experiment is usually to replace around 20% of the sucrose with TREHA® by weight.

For example:

100g sugar → 80g sugar + 20g TREHA®

From there, the ratio can be adjusted according to the result.

Some applications work well with substantially more trehalose, particularly meringue-based products and certain biscuits. Bread, croissants and choux need a different approach altogether.

These are starting ranges, not universal formulas.

The correct amount depends on the recipe, the other sugars present and the effect you are trying to achieve.

Using Trehalose in cakes

Cakes are probably the easiest place to begin experimenting with TREHA®.

For many conventional cakes, replacing around 15-30% of the sucrose gives a useful balance between reduced sweetness and maintaining the characteristics expected from ordinary sugar.

A simple starting point

If your cake contains:

200g sugar

try:

160g sucrose + 40g TREHA®

This gives 20% replacement.

What changes should you expect?

TREHA® can help cakes retain moisture and softness during storage. It also inhibits starch retrogradation, one of the processes associated with baked products becoming firmer and stale over time.

Research and manufacturer testing suggest that moderate substitution levels are generally more useful than simply replacing all of the sucrose.

For sponge and genoise-style cakes, 20-30% replacement is a particularly useful range to explore.

Pound cakes tend to require a little less, with manufacturer guidance typically starting around 15-20%.

TREHA® in chocolate cakes and brownies

Trehalose works particularly well where sweetness can obscure another strong flavour.

Chocolate is an obvious example.

Because TREHA® is much less sweet than sucrose, partial substitution can allow dark chocolate and cocoa flavours to remain more prominent without simply removing sugar solids from the recipe.

A useful range for chocolate cakes is approximately:

15-30% sucrose replacement

Rich brownies may require less.

Professional formulations sometimes use only around 10% TREHA® where the objective is moisture retention and flavour balance rather than a major reduction in sweetness.

This is a good example of why trehalose should be treated as a functional ingredient, rather than simply as a sugar replacement.

Using Trehalose in meringues

Meringues are one of the applications where TREHA® can be used at considerably higher proportions.

Trehalose can contribute to:

  • finer foam structure
  • improved foam stability
  • elasticity
  • reduced weeping
  • controlled sweetness

For chiffon cakes, soufflés and other recipes where a meringue forms part of the structure, replacing around:

30-40% of the sugar used in the meringue

is a useful starting point.

Italian meringue may use approximately:

30-50% TREHA®

within the sugar system.

Dry meringues can use much higher proportions because controlling sweetness and maintaining crispness are especially important.

Do not assume that the ratio suitable for a dry meringue will work in an ordinary cake batter.

Trehalose in cookies and biscuits

TREHA® can appear to behave differently in biscuits than it does in cakes.

In a moist cake, trehalose can help retain softness.

In a low-moisture biscuit, however, it can help maintain a crisp texture, including during storage in humid conditions.

For cookies, sablé and similar products, a useful starting range is:

20-30% sugar replacement

Some cookie formulations can tolerate substantially more, and experimental work has found useful results around 50% replacement in particular recipes.

Higher replacement also tends to produce a lighter-coloured bake, so this needs to be considered if deep browning is an important part of the finished product.

Will Trehalose make baked goods less brown?

Potentially, yes.

Trehalose is highly stable to heat and does not behave exactly like conventional sugars during heating.

As the proportion of TREHA® increases, cakes and biscuits can become lighter in colour.

This can be useful when you want:

  • pale bread
  • light-coloured sponge
  • delicate pastry
  • less pronounced browning

It may be undesirable where a dark crust, caramelisation or deeply browned appearance is an important part of the recipe.

Again, more trehalose is not automatically better.

Trehalose in puff pastry

Puff pastry illustrates why sugar replacement percentages are sometimes the wrong measurement.

TREHA® can be added to the détrempe, the base dough, at approximately:

2% of the détrempe weight

rather than being calculated simply as a percentage of the sugar.

Its role here is functional rather than primarily sweetening.

TREHA® can contribute to crispness, layer quality and reduced migration or separation of fat during storage.

Trehalose in choux pastry

Choux is another application where TREHA® is generally better considered as an addition to the overall formulation.

A starting point of approximately:

2-3% of the total formula

can be used.

TREHA® can help with moisture control, shell quality and maintaining the desired internal cavity.

Because choux contains relatively little conventional sugar, describing this as a percentage of “sugar replacement” would be misleading.

How to use Trehalose in bread

Bread requires a different rule from cakes and biscuits.

Ordinary sugar may provide fermentable carbohydrate for baker's yeast. TREHA® is not readily fermented by normal baker's yeast in the same way, so replacing the normal fermentable sugar with TREHA® can affect fermentation.

For most yeast breads, retain the ordinary sugar specified by the recipe and add TREHA® according to flour weight.

This is known as a baker's percentage.

Ordinary white bread

Start with:

2-5% TREHA® relative to flour weight

For example:

500g flour → approximately 10-25g TREHA®

Sweet and enriched bread

For brioche and similar doughs:

5-10% of flour weight

may be appropriate.

A professional brioche formulation, for example, can retain its normal sucrose while adding TREHA® at around 5% of flour weight.

Why use it?

In bread, TREHA® can help with:

  • softness
  • moisture retention
  • slower firming during storage
  • frozen storage
  • lighter eating quality

For ordinary bread, around 3-5% of flour weight is a particularly sensible first experiment.

Using Trehalose in croissants

Croissant dough combines the challenges of bread fermentation with laminated pastry.

Manufacturer guidance commonly places TREHA® around:

3-10% of flour weight

depending on the formulation.

As with bread, TREHA® should generally be added alongside the normal fermentable sugars rather than assumed to replace them completely.

Potential benefits include improved softness, frozen-dough stability and eating quality.

Does TREHA® help baked products stay fresh?

One of TREHA®'s most interesting baking applications is maintaining texture during storage.

Two relevant mechanisms are:

Moisture management
Trehalose interacts strongly with water and can help baked products retain desirable moisture.

Inhibition of starch retrogradation
Starches gradually reorganise after baking, contributing to the firming associated with staling. Trehalose can inhibit this process.

This is why TREHA® can be useful in cakes and breads intended to retain softness over several days.

How can Trehalose make cakes softer but biscuits crisper?

These two effects can sound contradictory.

They occur because the desired structures are very different.

In moist products such as cake and bread, TREHA® can help manage water and limit starch retrogradation, supporting a softer texture.

In dry products such as biscuits and pastry, TREHA® can help maintain a stable glassy structure and therefore support crispness.

The practical lesson is that the effect of trehalose depends upon the whole formulation and its moisture content, not simply the percentage of sugar being replaced.

Does TREHA® dissolve like ordinary sugar?

TREHA® is less soluble than sucrose, which becomes increasingly relevant at high concentrations.

Make sure it is properly incorporated into the recipe.

In wet batters and doughs this is normally straightforward.

For applications involving concentrated syrups, meringues or very low-moisture formulations, proper dissolution becomes more important.

Using excessive amounts can also encourage crystallisation, another reason to increase substitution gradually rather than assuming maximum replacement will produce the best result.

A simple rule for starting with TREHA®

If you are adapting an existing recipe for the first time:

Cakes and ordinary biscuits

Start with:

20% of the sugar replaced by TREHA®

Sponge and genoise

Try:

20-30%

Meringue-based products

Try:

30-40% of the meringue sugar

Ordinary yeast bread

Keep the normal fermentable sugar and add:

2-5% TREHA® relative to flour weight

Then assess:

  • sweetness
  • texture
  • colour
  • moisture
  • volume
  • behaviour after 24-48 hours

Adjust the next batch accordingly.

The biggest mistake when first using trehalose is to think only in terms of sweetness.

Its usefulness comes from the combination of:

  • mild sweetness
  • moisture management
  • starch-retrogradation inhibition
  • foam behaviour
  • crispness
  • heat stability
  • frozen-storage performance

That is why professional recipes use anything from a few percent TREHA® in bread or choux to very high proportions in specialist meringues.

The correct question is therefore not:

“How much sugar should I replace?”

but:

“What do I want TREHA® to do in this recipe?”
