How to use trehalose in pastry, confectionery and meringue with pastries, chocolates, meringues and biscuits

TREHA® trehalose is particularly useful in professional pastry and confectionery because it allows you to control sweetness, texture and stability separately.

At about 40% as sweet as sucrose, TREHA® can replace part of the ordinary sugar without removing the solids that help give pastries, creams and confectionery their structure.

But its value goes much further than simply making things less sweet.

Depending on the recipe, TREHA® can help:

  • stabilise meringue
  • maintain crispness
  • resist humidity
  • reduce stickiness and weeping
  • improve pastry layers
  • control fat migration
  • bring chocolate and fruit flavours forward

These are starting points rather than limits. Professional formulations often go considerably further where TREHA® is being used for a specific technical purpose.[1]


Trehalose in meringue

Meringue is one of the strongest applications for TREHA®.

Ordinary meringue contains a large quantity of sugar, partly because the sugar is needed to stabilise the foam. The result can be extremely sweet.

TREHA® allows much of that structural sugar to remain in the recipe while reducing sweetness substantially.

For a conventional Italian meringue:

Start by replacing 30–50% of the sucrose with TREHA®.

Sosa, for example, publishes an Italian lemon meringue using 100g sucrose and 100g trehalose, effectively making TREHA® half of the sugar system.[2]

The result is a meringue that can remain stable without the intense sweetness of an all-sucrose formulation.

Why TREHA® works so well in meringue

TREHA® can help produce:

  • stable foam
  • finer bubbles
  • good volume
  • increased elasticity
  • reduced weeping
  • controlled sweetness

Experimental work with egg-white foams has also found particularly strong foam stability in trehalose-containing systems.[3]

For pastry chefs, the practical advantage is simple:

You can build a stable meringue without having to make it excessively sweet.

Chiffon cakes and soufflés

Where meringue forms part of the structure of a chiffon cake or soufflé, a good starting point is:

30–40% of the meringue sugar replaced with TREHA®.

This helps maintain the aerated structure while allowing the finished product to taste lighter and less sugary.[1]

It is particularly useful where delicate flavours need to remain prominent.

Chocolate meringues

TREHA® becomes even more useful when a meringue contains ingredients that normally destabilise foam.

Chocolate, cocoa and fat can all make aerated egg-white systems harder to maintain.

Nagase specifically recommends TREHA® for meringues containing chocolate, butter and other high-fat ingredients, where it can help stabilise bubbles and improve shape retention.[4]

This opens up useful possibilities for:

  • chocolate sponge
  • dacquoise
  • chocolate soufflé
  • cocoa meringue
  • nut-based aerated cakes

Rather than increasing ordinary sugar simply to stabilise the foam, TREHA® allows structure to be maintained with considerably less sweetness.

Dry meringue

Dry meringue is where the amount of TREHA® can become surprisingly high.

Nagase professional guidance uses TREHA® for approximately:

83–90% of the sugar system

in some dried meringue applications.[1]

The aim is to create a product that is:

  • very crisp
  • less sweet
  • resistant to humidity
  • stable during storage
  • suitable for strong fruit and aromatic flavours

This is an application where TREHA® is not simply a partial substitute. It can become the principal functional sugar.


Trehalose in puff pastry

Puff pastry uses TREHA® very differently.

Here, there may be little or no sugar to replace.

Instead:

Add TREHA® at around 2% of the détrempe, excluding the roll-in butter.

For example:

1kg base dough → approximately 20g TREHA®

Nagase associates this with:

  • cleaner, lighter layers
  • greater crispness
  • better resistance to humidity
  • reduced fat migration and separation.[1][4]

For laminated pastry, therefore, TREHA® should be thought of as a small functional addition, rather than a sweetener.

Why this matters

A beautifully baked puff pastry can quickly lose quality when it absorbs moisture from fillings or the environment.

TREHA®'s ability to support a crisp structure makes it particularly useful in pastries that need to retain their texture after assembly or storage.

Applications include:

  • mille-feuille
  • vol-au-vent
  • pastry cases
  • palmiers
  • laminated dessert components

Trehalose in choux pastry

Choux is another application where TREHA® should be added to the formulation rather than calculated purely against sugar.

A good starting point is:

2–3% of the total choux mixture.

Nagase uses TREHA® in professional choux recipes to support:

  • regular shell formation
  • a clean internal cavity
  • moisture control
  • smooth eating texture.[1]

That can be particularly useful when the choux will be filled and stored before serving.

For éclairs, profiteroles and Paris-Brest, the quality of the shell after filling can be as important as the shell immediately after baking.


Trehalose in cookies and biscuits

TREHA® is especially useful where you want a biscuit to remain crisp rather than soften during storage.

Useful starting ranges are:

Cookies: around 30% sugar replacement

Sablé: 20–30%

Galette: 20–40%

Nagase recommends these ranges specifically for improved crispness and humidity resistance.[1]

There is good independent support for this effect. Research into sucrose-trehalose cookies found that adding trehalose increased the temperature at which the biscuit structure softened at equivalent moisture levels, helping it remain in a crisp glassy state under more demanding conditions.[5]

Put simply:

TREHA® helps biscuits stay crisp for longer.

How much should I try?

For a cookie recipe containing 200g sugar:

A 30% trial would be:

140g sucrose + 60g TREHA®

This is a strong starting point for chocolate-chip cookies, sablé and other crisp biscuits.

A recent experimental cookie study also found particularly good results around 50% trehalose substitution, showing that considerably higher replacement is possible where crispness and controlled sweetness are priorities.[6]


Financiers and madeleines

TREHA® can also be used in rich, buttery small cakes.

Nagase recommends approximately:

Financiers: 15–20% sugar replacement

Madeleines: 20–40% in high-sugar formulations.[1]

These products contain substantial butter and often depend heavily on texture and flavour rather than extreme sweetness.

TREHA® allows the nut, butter, vanilla or citrus flavours to become more prominent while helping manage moisture and fat movement.


Trehalose in ganache

Ganache is one of the most commercially interesting TREHA® applications for chocolatiers and pastry chefs.

The central problem is familiar:

Chocolate already contains sugar.

Add further glucose, invert sugar or sucrose to control texture and shelf behaviour and the ganache can quickly become sweeter than intended.

TREHA® provides useful solids with much less sweetness.

Nagase recommends around:

20% TREHA® within the sugar component of ganache

as a useful starting point.[1]

Its professional ganache formulation combines dark chocolate and cream with TREHA® and invert sugar, producing a ganache designed for good workability, shape retention and a clean chocolate flavour.[7]

Why use TREHA® in ganache?

TREHA® can help create ganache that is:

  • less sweet
  • more chocolate-forward
  • smooth in texture
  • easier to handle
  • better able to retain its shape
  • less prone to shrinkage during storage

The result is particularly useful in filled chocolates, where ganache shrinkage can leave an undesirable gap between the centre and the chocolate shell.

The commercial proposition is strong:

TREHA® lets the chocolate taste more like chocolate.


TREHA® in chocolate

Trehalose is also useful beyond ganache.

Independent research comparing alternative sugars in dark compound chocolate found trehalose produced properties closest to the conventional sucrose formulation and showed improved resistance to bloom during storage.[8]

This makes TREHA® worth considering in:

  • chocolate fillings
  • pralines
  • truffles
  • coated confectionery
  • chocolate creams
  • low-sweetness chocolate formulations

For truffles, Nagase gives a broad working range of:

20–50% of the sugar system.[1]

The exact amount depends on the chocolate, filling and desired sweetness.


Trehalose in pâte de fruit

Fruit confectionery is another particularly strong TREHA® application.

Nagase recommends approximately:

50% of the sugar system

for pâte de fruit.[1]

TREHA® can help:

  • reduce excessive sweetness
  • limit weeping
  • preserve bright fruit colour
  • bring fruit flavour forward

This is a particularly good example of TREHA® allowing the ingredient itself to dominate.

A raspberry pâte de fruit should taste primarily of raspberry, not sugar.

Research on fruit systems also supports trehalose's ability to help preserve volatile aroma compounds during processing.[9]

That makes it especially attractive for:

  • raspberry
  • blackcurrant
  • strawberry
  • apricot
  • passion fruit
  • citrus
  • cherry

Trehalose in marshmallow and guimauve

For marshmallow and guimauve:

Start around 20–30% sugar replacement.

Nagase associates TREHA® with:

  • a lighter, softer texture
  • reduced surface stickiness
  • cleaner bite
  • less overpowering sweetness.[1]

This works particularly well in flavoured marshmallows where large amounts of sucrose can otherwise mask fruit, vanilla, spice or chocolate.


Trehalose in caramel

For soft caramel:

Start around 20–35% sucrose replacement.

TREHA® can provide:

  • controlled sweetness
  • reduced stickiness
  • less weeping
  • cleaner dairy flavour
  • greater control over colour development.[1]

Because trehalose contributes less to browning than many other sugars, it is particularly useful where the aim is to preserve a creamy milk or butter character rather than create an intensely dark caramel.

This makes it valuable in:

  • milk caramel
  • soft caramel centres
  • caramel creams
  • filled chocolates
  • lighter-coloured confectionery

Trehalose in nougat

Nougat gives the confectioner considerably more flexibility.

For conventional nougat:

Start around 10–30% sugar replacement.

Specialist formulations can use much more TREHA®, in some cases approaching 60% of the sugar system.[1]

  • improved bite
  • less sticking to the teeth
  • shape stability
  • clearer nut and honey flavours

This is another application where the ideal level depends heavily on the precise style of confectionery being produced.


Florentines

Florentines are one of the more surprising high-TREHA® applications.

Nagase recommends TREHA® at up to:

around 70% of the sugar component.[1]

This can help deliver:

  • crispness
  • humidity resistance
  • reduced tooth-stick
  • less oil migration
  • clearer nut and caramel flavours

For a confection where the texture is supposed to be brittle and crisp rather than chewy or sticky, TREHA® can become one of the dominant sugars.


Trehalose in pastry cream

Creams provide another useful opportunity to reduce sweetness while improving stability.

For crème pâtissière:

Start around 40% sugar replacement.

TREHA® can help reduce water release while keeping the cream smooth and allowing milk, egg and vanilla flavours to come through more clearly.[1]

This is useful in:

  • éclairs
  • mille-feuille
  • fruit tarts
  • choux fillings
  • Danish pastry
  • plated desserts

Chantilly

Nagase guidance uses approximately:

6% sucrose + 6% TREHA® relative to cream weight.

So for 500g cream:

30g sucrose + 30g TREHA®

This gives the cream enough sweetness and solids while keeping the dairy flavour prominent.[1]

Buttercream

For buttercream:

Around 20% sugar replacement

is a useful starting point.[1]

TREHA® can reduce sweetness and allow butter, chocolate, coffee, fruit or nut flavours to remain more prominent.


Glazes and icings

TREHA® can be used at very high proportions in some glaze systems.

Nagase guidance uses around:

80–85% TREHA® in certain water-icing formulations.[1]

The objective is not primarily sweetness reduction.

It is to improve:

  • glaze stability
  • resistance to weeping
  • coating quality
  • appearance during storage

Nagase's English bakery guidance reports that heavy replacement of ordinary sugar with TREHA® can substantially extend the useful life of doughnut glaze by reducing moisture migration.[4]

This makes TREHA® particularly useful where products are prepared in advance or need to remain visually attractive in display.


Fruit flavour and colour

TREHA®'s lower sweetness is already enough to make fruit flavours seem stronger.

But there is evidence that the effect goes further.

Studies of fruit preparations have found trehalose can help retain volatile aromatic compounds during processing and storage.[9]

Research into strawberry cream fillings has likewise reported higher quantities of characteristic fruity aroma compounds when trehalose was included.[10]

For pastry chefs, the practical effect is straightforward:

TREHA® can help fruit desserts taste more like the fruit itself.

That is particularly useful in:

  • fruit creams
  • pâte de fruit
  • meringue
  • mousses
  • glazes
  • fillings
  • frozen desserts

TREHA® and browning

Trehalose does not behave exactly like ordinary sugars during baking and heating.

Increasing TREHA® generally produces a lighter-coloured product.

This can be useful where you want:

  • pale pastry
  • clean fruit colours
  • white chocolate products
  • delicate biscuits
  • light sponge
  • milk-forward confectionery

If strong caramelisation or deep browning is the objective, you may want to retain a greater proportion of conventional sugar.

The useful way to think about TREHA® is therefore:

greater control over colour as well as sweetness.
