How to Use Trehalose in Drinks & Cocktails: A Practical Guide

If you make drinks, cocktails or syrups, TREHA® gives you something ordinary sugar does not:

TREHA® trehalose is only about 40% as sweet as sucrose, so you can replace part of the ordinary sugar in a drink while allowing more of the ingredients you actually want to taste — fruit, citrus, botanicals or spirits — to come through.

TREHA® in Drinks: Where Should You Start?

The amount you use depends entirely on what you want trehalose to do.

These are starting points.

The best result normally comes from making a small control batch and a TREHA® version side by side.

The Easiest Experiment: Replace 25% of the Sugar

If you already have a drink recipe that works, this is where we recommend starting.

Take the amount of ordinary sugar you normally use and replace 25% of it by weight with TREHA®.

So:

100g sucrose

becomes:

75g sucrose + 25g TREHA®

Nothing else has to change.

Because TREHA® is only about 40% as sweet as sucrose, you retain the same total mass of sugars while reducing the approximate sweetness of the sugar system.

The real result will vary with acidity, temperature and the other flavours in your drink, but the table shows why trehalose is so useful.

You no longer have to choose simply between:

sweet enough but too sugary

and

less sweet but thin and unbalanced.

Lemonade, Soft Drinks & Cordials

TREHA® works particularly well when you want a fruit drink to taste fresh rather than sugary.

Suppose your lemonade contains:

80g sucrose per litre.

Try:

60g sucrose + 20g TREHA® per litre.

Keep everything else exactly the same.

Taste the two versions side by side and pay particular attention to:

  • citrus aroma
  • acidity
  • sweetness
  • fruit intensity
  • mouthfeel
  • finish

If the TREHA® version is still sweeter than you want, move to:

40g sucrose + 40g TREHA®

for a 50:50 sugar blend.

You can use the same approach with:

  • lemonade
  • limeade
  • orange drinks
  • cordials
  • sodas
  • fruit punches
  • homemade mixers

The key is to change the sugar blend first, rather than trying to reformulate the entire drink at once.

Fruit & Citrus Drinks

This is where trehalose becomes particularly interesting.

Fruit drinks are not just a balance between sweet and sour.

They can contain:

  • bitterness
  • astringency
  • tannins
  • aromatic oils
  • strong volatile flavour compounds

Trehalose has been investigated in drinks made with raspberry, passion fruit, blackcurrant, grapefruit and lemon, with sensory work reporting reduced astringency and changes in flavour perception.

Nagase Viita also identifies flavour optimisation — including citrus flavour enhancement — as one of the functions of TREHA®.

Try 1% First

For an acidic, bitter or astringent fruit drink, try:

1% TREHA® in the finished drink.

Finished drink TREHA®
250ml 2.5g
500ml 5g
1 litre 10g
5 litres 50g

Then make a second sample at:

2% TREHA®.

Compare:

Control → 1% → 2%

Rather than simply asking which is sweeter, look for changes in:

  • fruit character
  • astringency
  • bitterness
  • acidity
  • aroma
  • drying sensation
  • length of flavour

Grapefruit: One of the Best Fruits to Try

If you want a simple demonstration of what trehalose can do in a fruit drink, grapefruit is an excellent place to start.

Grapefruit naturally combines:

  • acidity
  • bitterness
  • astringency
  • strong aroma

Sensory formulation work with trehalose-containing grapefruit beverages reported reduced astringency and stronger grapefruit flavour perception.

Try three small batches:

Control

1% TREHA®

2% TREHA®

Keep every other ingredient identical.

This is particularly useful for:

  • grapefruit soda
  • Paloma-style mixers
  • grapefruit cordial
  • citrus RTDs
  • non-alcoholic aperitif-style drinks

TREHA® in Cocktails

Cocktails are one of the most exciting uses of trehalose because there are two completely different techniques to explore.

You can use TREHA®:

1. As Part of Your Syrup

This gives you less sweetness while retaining the body and dissolved sugar that help hold a cocktail together.

2. At Very Low Concentration

This allows you to experiment with alcohol perception, smoothness and flavour balance.

Start with the syrup method. It is simple and the difference is easy to taste.

Make a TREHA® Cocktail Syrup

A conventional 1:1 simple syrup might use:

100g sucrose + 100g water

For a good first TREHA® version, use:

75g sucrose + 25g TREHA® + 100g water

For a significantly drier syrup, try:

50g sucrose + 50g TREHA® + 100g water

Method

  1. Warm the water gently.
  2. Add the sucrose and TREHA®.
  3. Stir until completely dissolved.
  4. Allow it to cool.
  5. Use it exactly as you would use your normal simple syrup.

Your total mass of sugars has not changed.

What has changed is the sweetness.

That means you can keep the structure that syrup contributes while giving:

  • rum
  • whisky
  • tequila
  • gin
  • citrus
  • herbs
  • fruit

more room to show.

Try It First in a Daiquiri

A Daiquiri is one of the easiest ways to understand trehalose in cocktails because there are only three core components:

  • rum
  • lime
  • sugar

Make your normal Daiquiri with ordinary syrup.

Then make the same drink with your TREHA® syrup.

Do not change anything else.

You are looking for:

  • more obvious rum character
  • brighter lime
  • reduced sugary finish
  • cleaner balance
  • retained body

A Different Technique: Low-Dose TREHA® in Spirits & Cocktails

There is another use that has very little to do with sweetness.

Trehalose has been tested in alcoholic beverages at concentrations as low as:

0.01–0.10% of the finished drink.

That is approximately:

0.1–1g per litre.

Sensory trials with vodka reported less fiery alcohol character and greater smoothness at these concentrations.

Whiskey trials also produced changes in smoothness, alcohol perception and flavour timing.

These quantities are so small that it makes more sense to use a dosing solution than to try to weigh trehalose directly into each glass.

Make a 5% TREHA® Dosing Solution

Dissolve:

5g TREHA®

in enough water to make:

100ml solution.

Every 1ml now contains approximately:

0.05g TREHA®.

For a 100ml finished cocktail:

5% dosing solution Approximate final TREHA® level
0ml Control
0.2ml 0.01%
1ml 0.05%
2ml 0.10%

A useful first comparison is:

Control → 0.05% → 0.10%

Taste them blind if you can.

Look for:

  • alcohol heat
  • smoothness
  • spirit aroma
  • bitterness
  • body
  • finish

Which Cocktails Should You Try?

TREHA® is particularly worth experimenting with where either fruit or the spirit itself deserves more prominence.

Good candidates include:

  • Daiquiri
  • Margarita
  • Paloma

  • grapefruit cocktails

The Paloma Is Particularly Interesting

The Paloma combines several things trehalose can help you control:

  • grapefruit bitterness
  • grapefruit astringency
  • strong citrus aroma
  • tequila
  • sweetness

A TREHA® syrup allows you to balance the acidity without burying the grapefruit or tequila beneath sugar.

For your first Paloma trial, use a 50:50 sucrose/TREHA® cocktail syrup and compare it directly with your normal recipe.

You may find the grapefruit tastes more like grapefruit rather than simply “sweet citrus”.

Passion Fruit & Berry Cocktails

The same principle works particularly well with strongly flavoured fruit.

Passion fruit, blackberry and raspberry already bring plenty of character.

They rarely need more sweetness to make them taste more intense.

A mixed sucrose/TREHA® syrup can help you retain:

  • fruit body
  • acidity
  • aroma
  • cocktail structure

while taking the sugary edge away.

This is particularly useful when your recipe already contains a sweet fruit liqueur.

Functional Drinks

TREHA® can also be useful where flavour problems come from the functional ingredients themselves.

Functional drinks may contain:

Start at 1%

For a functional beverage trial:

start with 1% TREHA®.

For one litre:

10g TREHA®

Then try:

20g per litre — 2%

Taste them alongside the original formulation.

You are looking for the lowest amount that gives you the improvement you want.

Protein & Collagen Drinks

Trehalose is also well known for its interaction with proteins, and TREHA® has been demonstrated commercially in collagen beverage formulations.

For a protein or collagen drink, a useful first sensory test is:

Control → 1% → 2% TREHA®

Compare:

  • protein aftertaste
  • bitterness
  • aroma
  • mouthfeel
  • fruit flavour
  • sweetness

If your drink already contains sugar, you can then combine this with partial sucrose replacement to reduce sweetness as well.

Sports & Exercise Drinks

TREHA® has a quite different role in sports drinks.

Here it can become the carbohydrate itself.

Human research has tested trehalose beverages at concentrations including:

  • 4%
  • 6%
  • 8%

Trehalose is digested differently from simply drinking glucose, producing a more gradual blood-glucose and insulin response in controlled studies, and it has been investigated for prolonged exercise and endurance.

Tea & Coffee

Trehalose is also worth experimenting with in drinks where bitterness and astringency are part of the flavour profile.

For tea or coffee, try:

1% TREHA®

and compare it with your normal drink.

Pay attention to:

  • bitterness

How to Add TREHA® to Drinks

TREHA® is easy to use.

For normal beverage concentrations, simply dissolve it into the liquid.

For larger quantities or syrups, warm liquid makes the process faster.

Cold Drinks

Dissolve TREHA® in a small amount of warm water or juice first, then add it to the full drink.

Cocktails

Either include TREHA® when making the syrup or use a pre-made dosing solution for very low-concentration trials.

Functional Drinks

Blend it with the other carbohydrate or powdered ingredients before adding liquid, or dissolve it separately.

Dry Mixes

TREHA® can be incorporated directly into your dry ingredient blend.

The best way to understand TREHA® is to taste it.

Make two or three small samples and change only one variable at a time.
