These are useful starting points rather than limits. In most savoury foods, TREHA® is being used primarily as a functional ingredient, not as a sweetener.[1]
Trehalose in meat and poultry
For chicken, pork, beef and other meats, a simple starting point is:
TREHA® at around 2% of the meat weight
So:
1kg meat → about 20g TREHA®
TREHA® can be:
- sprinkled directly onto the meat
- mixed into seasoning
- incorporated into a marinade
- added to a brine
Nagase recommends this level for helping meat retain juiciness, tenderness and eating quality during cooking and holding.[1][2]
Why use TREHA® in meat?
Cooking causes meat proteins to tighten and expel water.
TREHA® can help stabilise proteins and retain moisture, helping the finished meat remain softer and juicier.
Independent research supports this application. A 2025 pork-meatball study used 20g trehalose per kilogram of meat, almost exactly the 2% professional starting level, and found reduced cooking loss and improved water retention.[3]
For caterers, restaurants and meal-prep applications, that is particularly useful where meat may need to be:
- cooked ahead
- held hot
- chilled and reheated
- frozen and thawed
Chicken and fried foods
TREHA® is especially useful in poultry.
Nagase has tested around 2% TREHA® in chicken marinades, reporting better moisture retention and improved eating quality after cooking and holding.[2]
For a simple trial:
500g chicken → around 10g TREHA®
Add it to the normal marinade or seasoning rather than treating it as a separate sweet ingredient.
At this level, the objective is not to make the food sweet. It is to help the meat retain the qualities associated with freshly cooked chicken.
Trehalose in fish and seafood
Fish and seafood are particularly well suited to TREHA® because their proteins and texture can deteriorate quickly through freezing, thawing and cooking.
Nagase recommends:
around 2% TREHA® relative to fish weight
for many fish applications.[1]
TREHA® can help:
- retain moisture
- reduce drip after thawing
- protect texture
- maintain colour
- reduce deterioration during frozen storage
A substantial independent literature supports trehalose's ability to protect fish proteins and reduce quality loss through freezing.[4]
Can TREHA® reduce fishy odour?
Yes, this is one of the more interesting savoury applications.
A Japanese study on mackerel found that trehalose reduced formation of trimethylamine during boiling, one of the compounds strongly associated with fishy odour.
The trehalose-treated fish produced a headspace trimethylamine level around 36% lower than the untreated controlunder the conditions tested.[5]
For culinary use, the practical message is:
TREHA® can help keep cooked fish tasting and smelling cleaner and fresher.
This is particularly relevant for oily fish such as mackerel.
Trehalose in prawns and crustaceans
For prawns, shrimp and similar shellfish, Nagase recommends:
2.5% TREHA® in the cooking water
So for:
1 litre water → about 25g TREHA®
This helps shellfish retain moisture, texture and visual quality during cooking.[1]
TREHA® is also used extensively in research on frozen shrimp and seafood because of its ability to help protect proteins during freezing and thawing.[4]
That makes it useful for both freshly cooked seafood and products that will subsequently be chilled or frozen.
TREHA® and sushi
Sushi combines several foods that benefit from TREHA®:
- rice
- raw fish
- prawns
- squid
- mackerel
- salmon roe
Nagase has developed detailed TREHA® techniques specifically for sushi preparation.[6]
Sushi rice
For rice generally, start with:
TREHA® at 2% of the uncooked rice weight
So:
500g dry rice → 10g TREHA®
Nagase also recommends increasing the cooking water slightly, by around 5%, when TREHA® is added.[1]
TREHA® helps cooked rice remain:
- soft
- moist
- less brittle
- pleasantly sticky
for longer after cooking.
That is particularly valuable in sushi, bento and prepared rice dishes that are not eaten immediately.
TREHA® in sushi vinegar
Another option is to replace:
10–20% of the sugar in sushi vinegar with TREHA®
This reduces sweetness while helping the rice retain a soft texture, particularly when it will be chilled.[6]
Fish for sushi
Nagase also uses TREHA® directly with tuna, salmon, squid, mackerel and white fish to help control drip, moisture, colour and flavour through chilling and freezing.[6]
This makes sushi one of the clearest examples of TREHA® being used across an entire savoury dish rather than in only one ingredient.
Why does TREHA® help rice stay soft?
Cooked rice gradually becomes harder as it cools and sits.
This is largely caused by starch retrogradation, where cooked starch molecules begin to reorganise and firm up.
TREHA® can slow this process.
A 2025 study on acidified sushi rice found that trehalose slowed increases in hardness and helped maintain stickiness during storage.[7]
Importantly, this means TREHA® can help rice retain the texture of freshly cooked rice for longer.
That makes it useful in:
- sushi
- rice bowls
- bento
- takeaway meals
- chilled ready meals
- meal preparation
For ordinary cooking, the simple ratio remains:
2% of uncooked rice weight
Trehalose in noodles and pasta
For noodles and pasta:
Use TREHA® at around 1–2% of flour weight
So:
500g flour → 5–10g TREHA®
Nagase recommends this range to support moisture retention and help cooked noodles maintain a desirable texture after cooking.[1]
This is particularly useful where noodles will be:
- held before serving
- chilled
- reheated
- packed into prepared meals
- delivered
The amount is small enough that the TREHA® is being used for functionality, not sweetness.
Dumplings and wrappers
For dumpling wrappers:
Start around 1–3% of flour weight
So for 500g flour:
5–15g TREHA®
TREHA® can help the dough retain moisture and remain workable.[1]
This can be useful in:
- gyoza
- wontons
- steamed dumplings
- filled pasta
- other wrapped savoury products
particularly where wrappers need to remain flexible before cooking.
Trehalose in vegetables and salads
TREHA® is particularly useful with cut vegetables because moisture loss can quickly make them appear limp and tired.
Nagase recommends:
a 3% TREHA® water solution
with vegetables soaked for around:
30 minutes.[1][2]
That means:
1 litre water → about 30g TREHA®
This can help cut vegetables retain:
- crispness
- moisture
- shape
- colour
What vegetables can be treated?
Nagase has demonstrated the method with foods such as:
- cucumber
- carrot
- radish
- salad vegetables
and similar produce.[2]
For prepared salads, sandwich fillings and catering mise en place, this is a simple way to help vegetables retain a freshly cut appearance and texture.
Blanched vegetables
For vegetables that are being cooked:
Use around 2–3% TREHA® in the cooking or blanching water
This can help retain colour and a pleasantly firm texture.[1]
Independent vegetable research has also investigated trehalose solutions as a way of helping protect plant tissue through blanching and processing.[8]
Trehalose and avocado
Avocado is particularly prone to losing its attractive fresh appearance after cutting.
Nagase has demonstrated peeled avocado soaked for:
30 minutes in a 10% TREHA® solution
before refrigerated storage.[2]
This is considerably higher than the normal 3% salad soak, so it is better treated as a specialist application rather than the standard vegetable ratio.
For ordinary cut vegetables, start with 3%.
Trehalose in egg dishes
For eggs:
Start with TREHA® at around 3% of egg weight
So:
300g beaten egg → about 9g TREHA®
Nagase uses this level to help cooked egg dishes remain:
- moist
- soft
- finely textured
- less rubbery after holding.[1]
This is useful in:
- omelettes
- scrambled egg
- rolled omelette
- egg custards
- quiche fillings
- prepared breakfast foods
Nagase's Japanese rolled-omelette guidance also uses around 3% TREHA®, specifically to retain a moist, fine texture.[9]
Trehalose in savoury egg custard
TREHA® is also used in delicate savoury custards such as Japanese chawanmushi.
Nagase describes TREHA® as helping limit excessive protein tightening during cooking, producing a smoother finished custard.[10]
That same principle can be useful anywhere egg proteins need to set gently rather than becoming coarse or rubbery.
Trehalose in tomato sauce
For tomato sauces:
Start with around 1.5% TREHA® of the total recipe weight
So:
1kg sauce → about 15g TREHA®
Nagase associates this with:
- stronger tomato flavour
- balanced acidity
- brighter colour
- smoother overall taste.[1]
Because TREHA® is only about 40% as sweet as sucrose, this small amount can modify flavour and texture without making the sauce taste sugary.
It can work well in:
- pasta sauce
- pizza sauce
- tomato-based braises
- dipping sauces
- prepared meals
Trehalose in béchamel and creamy sauces
For béchamel:
Use around 3.5% of the complete formulation
So:
1kg béchamel → about 35g TREHA®
Nagase recommends this level for smoother texture, stronger dairy character and improved freeze-thaw performance.[1]
This can be particularly useful in:
- lasagne
- gratins
- croquettes
- frozen ready meals
- filled pastries
- prepared sauces
where a sauce may otherwise separate or become grainy after freezing and reheating.
Prepared meals, takeaway and delivery
TREHA® has particularly useful applications in food that must remain attractive after it leaves the kitchen.
Nagase specifically positions TREHA® for:
- sandwiches
- wraps
- salads
- pasta bowls

- takeaway meals
